Vegetarian Quinoa Burger Patties

Ingredients:

  • 2 cups cooked quinoa (cooked with a about ½ teaspoon of salt)
  • ½ cup cottage cheese
  • ¼ cup freshly chopped parsley
  • 1 large grated carrot
  • 1 large grated zucchini
  • 2 eggs
  • 1 teaspoon onion powder
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • ½ tablespoon minced garlic
  • Optional: Add 1 tablespoon chili powder for the spicy version

Method:

  • Prepare the quinoa by adding uncooked quinoa, water and salt to a large pot. Bring to boil, cover and let it simmer for about 15 minutes (to get 2 cups of cooked quinoa, use about 2/3 cup dry quinoa)
  • Once the quinoa is cooked, spread it out on a sheet pan or baking tray to cool for about 10 minutes
  • Mix all ingredients together in a large bowl
  • Using your hands form into burger shapes (makes about 12 patties)
  • Place on a large baking tray
  • Bake in oven at 220 degrees Celsius for 20 minutes on one side then flip and bake for another 15-20 minutes
