Ingredients:
- 2 cups cooked quinoa (cooked with a about ½ teaspoon of salt)
- ½ cup cottage cheese
- ¼ cup freshly chopped parsley
- 1 large grated carrot
- 1 large grated zucchini
- 2 eggs
- 1 teaspoon onion powder
- 1 teaspoon pepper
- 1 teaspoon salt
- ½ tablespoon minced garlic
- Optional: Add 1 tablespoon chili powder for the spicy version
Method:
- Prepare the quinoa by adding uncooked quinoa, water and salt to a large pot. Bring to boil, cover and let it simmer for about 15 minutes (to get 2 cups of cooked quinoa, use about 2/3 cup dry quinoa)
- Once the quinoa is cooked, spread it out on a sheet pan or baking tray to cool for about 10 minutes
- Mix all ingredients together in a large bowl
- Using your hands form into burger shapes (makes about 12 patties)
- Place on a large baking tray
- Bake in oven at 220 degrees Celsius for 20 minutes on one side then flip and bake for another 15-20 minutes
